Why is UK Mother's Day different to the American one?

They're two separate days. Mothering Sunday is a church date tied to Easter; the US version is fixed to the second Sunday in May. If you're posting abroad, check which one you're aiming at.

When should I post a Mother's Day card?

Order by the Tuesday before. Orders placed on a working day usually go out the same day, and First Class is normally next working day - Second Class is meant to be two but can take up to five.
